Grilled Guacamole

Makes: 425ml


  1. 3 cups red wine (Pot Noir, Rioja, Zinfandel, Shiraz etc.)
  2. 3 cups Pomegranate Italian Soda
  3. 1 cup fresh blackberries
  4. 2 ripe plums, halved, pitted and thinly sliced
  5. 1 orange, quartered and sliced
  6. 1/2 bunch fresh mint, plus sprigs for garnish
  7. Ice


  1. Preheat barbecue to high. In a bowl, mix together onion, salt, lime juice and roasted garlic paste. Set aside.
  2. Grill avocado 1 to 2 min. per side. Remove from barbecue, roughly chop and add to red onion mixture. Mix in tomatoes, cilantro and hot sauce. Serve with tortilla chips.
Tip!: To prevent this fruit from slipping through the barbecue grates, quarter or halve the avocado and grill flesh side down.
