Ingredients

  • 1/4 cup (60 mL) finely diced red onion
  • 1/4 tsp (1 mL) salt
  • 2 tbsp (30 mL) lime juice
  • 1 tsp (5 mL) Roasted Garlic Seasoning Paste
  • 2 avocados, ripe but firm, peeled, pitted and quartered
  • 1/3 cup (75 mL) finely diced SUNSET® Campari™ Tomatoes
  • 2 tbsp (30 mL) finely chopped fresh cilantro
  • 1/2 tsp (2 mL) hot sauce

Method

  1. Preheat barbecue to high. In a bowl, mix together onion, salt, lime juice and roasted garlic paste. Set aside.
  2. Grill avocado 1 to 2 min. per side. Remove from barbecue, roughly chop and add to red onion mixture. Mix in tomatoes, cilantro and hot sauce. Serve with tortilla chips.
Tip!: To prevent this fruit from slipping through the barbecue grates, quarter or halve the avocado and grill flesh side down.
