Grilled Asparagus with Hazelnuts and Feta

Ingredients

  1. 2 tbsp (30 mL) Sensations by Compliments Pure 100% Olive Oil, divided
  2. 1/4 tsp (1 mL) each salt and pepper
  3. 1 lb (500 g) asparagus, trimmed
  4. 1 tsp (5 mL) lemon zest
  5. 2 tbsp (30 mL) lemon juice
  6. 1/3 cup (75 mL) finely crumbled Compliments Greek-Style Feta Cheese in Brine
  7. 1/4 cup (60 mL) chopped toasted hazelnuts
  8. 2 tbsp (30 mL) finely chopped fresh mint

Method

  1. Drizzle 1 tsp (5 mL) olive oil and sprinkle salt and pepper onto asparagus; turn to coat. Place on grill preheated to medium. Cook 3 to 5 min. for thinner stalks or 5 to 7 min. for thicker stalks, turning occasionally, until tender and lightly charred. Transfer to serving platter. 
  2. Toss with remaining oil, lemon zest and juice. Sprinkle on feta, hazelnuts and mint. 

Tips:
• Substitute hazelnuts with walnuts.
