Green Mango Smoothie Bowl

Ingredients

  1. 1 1/4 cups (300 mL) frozen Compliments Mango Mania or other frozen fruit, divided
  2. 1 cup (250 mL) roughly chopped kale leaves, stems removed
  3. 1 cup (250 mL) Compliments Organic Baby Spinach
  4. 1 cup (250 mL) apple juice
  5. 2 ripe bananas, peeled and divided
  6. 1/2 ripe avocado, peeled, halved and pit removed
  7. 2 tsp (10 mL) grated fresh ginger
  8. 1/4 cup (60 mL) blueberries
  9. 2 tbsp (30 mL) natural sliced almonds, toasted
  10. 2 tbsp (30 mL) chia seeds

Method

  1. In a blender add 1 cup (250 mL) frozen mango, kale, spinach, apple juice, 1 banana, avocado and ginger. Top with 1 cup (250 mL) cold water. Blend for 1 to 2 min on high speed or until smooth and creamy. 
  2. Meanwhile, slice remaining banana. Place remaining mango under cold, running water until softened. Chop into smaller pieces. 
  3. Pour smoothie into 4 bowls. Top evenly with banana slices, mango, blueberries, almonds and chia seeds.
