Ingredients

  • 3/4 lb (375 g) green beans, ends trimmed
  • 1 cup (250 mL) cherry or grape tomatoes, halved
  • 1 small shallot, minced
  • 1/4 cup (60 mL) coarsely chopped fresh Compliments Basil
  • 3 tbsp (45 mL) olive oil
  • 1 tbsp (15 mL) Compliments Red Wine Vinegar
  • 1/4 tsp (1 mL) each salt and pepper

Method

  1. Cook beans in a large pot of boiling water until tender-crisp, about 2 min. Drain and rinse under cold water. Pat dry and transfer to a bowl with tomatoes, shallot and basil.
  2. Whisk oil with vinegar, salt and pepper. Toss salad with dressing and serve.
