spinach, washed, stems removed
10% half & half cream
crumbled soft goat cheese
250 mL /125 g
clove garlic, finely chopped
salt and pepper to taste
grated Gouda (optional)
In large saucepan, cook pasta according to package instructions. Stir in spinach in last min of cooking. Drain and reserve pasta and spinach in saucepan.
In another saucepan, bring cream to a simmer over medium-high heat. Stir in goat cheese, garlic and nutmeg until goat cheese is melted.
Pour goat cheese mixture onto reserved pasta and spinach. Toss to coat with sauce. Season with salt and pepper. Divide into 4 serving bowls. Sprinkle with grated Gouda, if desired. Serve immediately.
