Gluten-Free Almond Apple Crisp

Ingredients

  1. 4 Golden Delicious or Jonagold apples, peeled and chopped (about 5 cups/1.25 L)
  2. 1 tbsp (15 mL) cornstarch
  3. 1 tbsp (15 mL) maple syrup
  4. ½ tsp (2 mL) lemon zest
  5. 1 tbsp (15 mL) lemon juice
  6. 1 tsp (5 mL) vanilla extract
  7. ¼ cup (60 mL) firmly packed brown sugar
  8. ¼ cup (60 mL) ground almonds
  9. ¼ cup (60 mL) slivered almonds
  10. 2 tbsp (30 mL) melted coconut oil

Method

  1. Preheat oven to 350°F (180°C). In bowl, toss apples with cornstarch, maple syrup, lemon zest, lemon juice and vanilla. Divide among 4 (1-cup/250-mL) ramekins.
  2. In another bowl, stir together brown sugar, ground almonds, slivered almonds and coconut oil; sprinkle evenly over apples. Bake 30 to 35 min. until apples are soft and juices bubbling. Serve warm with dollops of whipped cream or vanilla ice cream.
Tip:
Jonagold and Golden Delicious are great all-purpose baking apples for pies, tarts and crisps. They have a sweet-tart taste and pleasingly tender texture when cooked.
