Fresh Cherry Sauce & French Toast

Ingredients

  1. approx. 40 fresh cherries, pitted
  2. 1 cup (250 mL) maple syrup
  3. 1/8 tsp (0.5 mL) each ground cinnamon, cloves and nutmeg
  4. 3 eggs
  5. 1/2 cup (125 mL) milk
  6. 1/4 cup (60 mL) orange juice
  7. 1/2 tsp (2 mL) ground cinnamon
  8. 8 thick slices French bread
  9. 3 tbsp (45 mL) butter

Method

  1. Place cherries, maple syrup and 1/8 tsp (0.5 mL) each nutmeg, cinnamon and cloves in saucepan set over medium-low heat; allow mixture to just heat through; remove from heat and steep cherries in syrup while doing next steps.
  2. In bowl, whisk together eggs, milk, orange juice and 1/2 tsp (2 mL) cinnamon. Pour into wide high-sided dish. Soak bread slices in egg mixture.
  3. Melt butter in large skillet over medium heat. Cook soaked bread, 3 to 4 min. per side, until golden brown. Divide onto 4 serving plates. Top with cherry sauce to serve.
