Fish Tacos with Cucumber-Apple Salsa

Ingredients

  1. 1 lb (500 g) fresh haddock fillets or any white-fleshed fish (cook in 2 Seafood Steamer bags with Garlic-Parsley Butter Pucks according to package directions)
  2. 1 cup (250 mL) finely diced English cucumber
  3. 1 cup (250 mL) finely diced green apple
  4. 1/4 cup (60 mL) finely diced orange pepper
  5. 1/4 cup (60 mL) finely diced red onion
  6. 1/2 red chili pepper, seeded and thinly sliced
  7. 3 tbsp (45 mL) lime juice
  8. 2 tbsp (30 mL) chopped cilantro
  9. 1/2 tsp (2 mL) salt
  10. 8 whole-wheat tortillas (7 in./18 cm), warmed

Method

  1. Cook fish according to Seafood Steamer bag directions.
  2. Meanwhile, in bowl, mix cucumber, apple, pepper, onion, chili, lime juice, cilantro and salt. Let stand 5 min Halve each fish fillet lengthwise. Place on side of each tortilla, top with salsa and fold over.
