Goat Cheese Fettuccine Alfredo

  1. 8 oz (250 g) fettuccine
  2. 1 bag (170 g) spinach, washed, stems removed
  3. 1 cup (250 mL) 10% half & half cream
  4. 1 cup (250 mL /125 g) crumbled soft goat cheese
  5. 1 clove garlic, finely chopped
  6. 1/4 tsp (1 mL) nutmeg
  7. salt and pepper to taste
  8. 1/2 cup (125 mL) grated Gouda (optional)


  1. In large saucepan, cook pasta according to package instructions. Stir in spinach in last min of cooking. Drain and reserve pasta and spinach in saucepan.
  2. In another saucepan, bring cream to a simmer over medium-high heat. Stir in goat cheese, garlic and nutmeg until goat cheese is melted.
  3. Pour goat cheese mixture onto reserved pasta and spinach. Toss to coat with sauce. Season with salt and pepper. Divide into 4 serving bowls. Sprinkle with grated Gouda, if desired. Serve immediately.
