Goat Cheese Fettuccine Alfredo
Ingredients

8 oz (250 g) fettuccine

1 bag (170 g) spinach, washed, stems removed

1 cup (250 mL) 10% half & half cream

1 cup (250 mL /125 g) crumbled soft goat cheese
-
1 clove garlic, finely chopped

1/4 tsp (1 mL) nutmeg
-
salt and pepper to taste

1/2 cup (125 mL) grated Gouda (optional)
Method
- In large saucepan, cook pasta according to package instructions. Stir in spinach in last min of cooking. Drain and reserve pasta and spinach in saucepan.
- In another saucepan, bring cream to a simmer over medium-high heat. Stir in goat cheese, garlic and nutmeg until goat cheese is melted.
- Pour goat cheese mixture onto reserved pasta and spinach. Toss to coat with sauce. Season with salt and pepper. Divide into 4 serving bowls. Sprinkle with grated Gouda, if desired. Serve immediately.
