Turkey Fajitas with Chipotle Cream

  1. 2 red bell peppers, stemmed and seeded
  2. 1 large onion
  3. 21/2 tablespoons Sensations Extra Virgin 100% Olive Oil
  4. 1 package (about 1 pound) Turkey Breast Cutlets, cut crosswise into thin strips
  5. 1 teaspoon Compliments Chili powder
  6. 1/2 teaspoon ground cumin
  7. 8 flour tortillas (soft taco size), warmed


  1. Preheat oven broiler to high heat. 
  2. Cut peppers in half lengthwise.
  3. Peel onion and cut into 8 wedges. 
  4. Place vegetables in a single layer in a broiler pan or baking pan. 
  5. Drizzle with 11/2 tablespoons olive oil and season to taste with salt. 
  6. Broil peppers and onion 4 to 6 inches from heat, turning once, until charred on edges, 10-15 minutes total.
  7. Meanwhile, combine sour cream, lime juice, and chipotle chile in a blender or food processor. 
  8. Whirl until smoothly blended; transfer sauce to a serving container and set aside.
  9. In a small bowl, combine turkey strips with chili powder, cumin, and salt to taste; mix to coat evenly. 
  10. Heat remaining oil in a 12 to 14-inch nonstick frying pan over high heat. 
  11. Add turkey and stir constantly until meat is lightly browned and no longer pink in center (cut to test), 2-3 minutes.
  12. To serve, cut broiled peppers crosswise into strips. 
  13. Transfer peppers,onions, and turkey to a serving platter. 
  14. Spoon into warm flour tortillas and top with sour cream sauce to taste.
