Ingredients

  • 8 eggs
  • 1/3 cup (75 mL) milk
  • 2.5 oz (75 g) country-style or black forest ham, finely diced
  • 4 oz (125 g) Havarti cheese, finely diced
  • salt and pepper to taste
  • 3 tbsp (45 mL) butter
  • 1 tbsp (15 mL) snipped fresh chives

Method

  1. In medium bowl, fork-beat eggs, then beat in milk. Stir in ham, cheese, salt and pepper.
  2. Melt the butter in large non-stick skillet over medium-low heat. Pour in egg mixture. As it begins to set, gently move a heatproof spatula across the bottom and sides of the skillet until the egg mixture forms large, moist curds. Sprinkle with chives and serve.
