Smokey Bacon & Tomato Bean Dip

  1. 3 slices Naturally Smoked Bacon, chopped
  2. 1 clove garlic, minced
  3. 1/2 cup chopped onion
  4. 1/3 cup Sundried Tomatoes, blanched and thinly sliced
  5. 1 can Six Bean Blend, drained and rinsed
  6. 1 cup fat-free sour cream
  7. 2 tbsp fresh parsley leaves
  8. 1/8 tsp ground cumin
  9. 1 cup seeded and diced tomato


  1. In a skillet, cook bacon, garlic, onion and sundried tomatoes until bacon is crisp; cool to room temperature.
  2. In a food processor, combine bacon mixture, beans, sour cream, parsley and cumin. Process until smooth. Stir in tomato. Spoon dip into a wide dish.
