Ingredients

  • 3 slices Naturally Smoked Bacon, chopped
  • 1 clove garlic, minced
  • 1/2 cup chopped onion
  • 1/3 cup Sundried Tomatoes, blanched and thinly sliced
  • 1 can Six Bean Blend, drained and rinsed
  • 1 cup fat-free sour cream
  • 2 tbsp fresh parsley leaves
  • 1/8 tsp ground cumin
  • 1 cup seeded and diced tomato

Method

  1. In a skillet, cook bacon, garlic, onion and sundried tomatoes until bacon is crisp; cool to room temperature.
  2. In a food processor, combine bacon mixture, beans, sour cream, parsley and cumin. Process until smooth. Stir in tomato. Spoon dip into a wide dish.
