Ingredients

  • 2 tbsp (30 mL) olive oil
  • 3 shallots, sliced
  • 1/2 lb (250 g) thinly sliced mushrooms
  • 3 cloves garlic, minced
  • 1 tbsp (15 mL) finely chopped fresh thyme
  • 1 tbsp (15 mL) Dijon mustard
  • 1/4 tsp (1 mL) each salt and pepper
  • 2 tbsp (30 mL) all-purpose flour
  • 1 cup (250 mL) sour cream
  • 1 pkg (750 g) frozen green beans (or green and wax beans), thawed
  • 1/3 cup (75 mL) grated Parmesan cheese
  • 1 cup (250 mL) packaged crispy fried onions

Method

  1. Preheat oven to 200ºC (400ºF). Heat oil in large skillet set over medium heat. Cook shallots 3 to 5 min. until starting to brown. Add mushrooms, garlic, thyme, mustard, salt and pepper. Cook 6 to 8 min. until mushrooms start to brown. Sprinkle on flour and stir through. Cook 2 min. until no dry flour remains. Remove from heat.
  2. Stir in sour cream until sauce is smooth. Fold in green beans and Parmesan. Spoon into greased 13 x 9-in. (3-L) baking dish. Sprinkle fried onions overtop.
  3. Bake 25 to 35 min., until golden brown and bubbling. Let stand 10 min. before serving.
Tip:
This dish can be assembled, covered and refrigerated up to 8 hr. before baking.
