Ingredients

  • 1/4 cup (60 mL) butter, at room temperature
  • 1 jalapeño pepper, seeded and finely diced
  • 1 tsp (5 mL) honey
  • 1 tsp (5 mL) lime zest
  • 1/2 tsp (2 mL) ground cumin
  • 1/2 tsp (2 mL) salt
  • 1/4 tsp (1 mL) pepper
  • 4 cobs corn, husked
  • Lime wedges, for serving

Method

  1. Stir together butter, jalapeño, honey, lime zest, cumin, salt and pepper until blended.
  2. Preheat grill to medium-high; grease grate well. Grill corn, turning occasionally, for 10 to 12 minutes per side or until lightly charred and tender.
  3. Brush butter mixture over hot corn; serve with lime wedges.

Tip: Garnish corn with 2 tbsp (30 mL) chopped fresh cilantro if desired. The butter is also delicious on grilled steak or fish.
