Classic Hummus

Ingredients

  1. 1 can (540 mL) chickpeas, drained
  2. 2 cloves garlic, minced
  3. 1/3 cup (75 mL) olive oil
  4. 1/3 cup (75 mL) tahini (sesame seed butter)
  5. 3 tbsp (45 mL) lemon juice
  6. 1/2 tsp (2 mL) salt
  7. 1/4 tsp (1 mL) pepper
  8. Pinch paprika
  9. Pita bread and vegetable sticks (celery, carrots, cucumbers) to serve

Method

  1. In food processor, combine chickpeas and garlic. Purée 30 sec., or until coarsely mashed. Add tahini, olive oil, 1/4 cup (60 mL) water, lemon juice, salt and pepper. Purée until smooth or to desired consistency. Transfer to small bowl, and sprinkle with paprika. Serve with pita and vegetables.
