Spiced Cranberry & Pear Chutney

Makes: 500 mL (2 cups)

Ingredients

  1. 2 cups (500 mL) fresh or frozen cranberries
  2. 1/2 cup (125 mL) firmly packed brown sugar
  3. 2 medium pears, peeled and diced
  4. 1 cup (250 mL) apple juice
  5. 1/4 cup (60 mL) fresh lime juice
  6. 1/2 tsp (2 mL) mustard seeds
  7. 1/4 tsp (1 mL) ground cinnamon
  8. 1/8 tsp (0.5 mL) crushed chili flakes
  9. 1 tbsp (15 mL) finely chopped fresh ginger

Method

  1. Place cranberries, brown sugar, pears, apple juice, lime juice, mustard seeds, cinnamon, chili flakes and ginger in saucepan. Bring to a low simmer over medium heat. Gently simmer 25 to 30 min., until slightly thickened. Cool to room temperature. Store in airtight container in fridge up to 2 weeks.

Tip: This chutney is delicious with roast poultry, duck and pork. It can also be a zesty accompaniment on cheese boards.
