Ingredients

Compliments Regular Sliced Bacon
1/2 pound
2 cups
Compliments Peaches and Cream Corn

large onion, chopped
1 tsp
minced Compliments Organic Thyme
salt and freshly ground pepper

Compliments Unbleached Flour
3 cups
Compliments Beef Broth
3 tbps
mild green Chilies, diced
1 cup
Lucerne® Half and Half

Method

Step 1
In a deep, 12 to 14-inch sauté pan, combine bacon, corn, onion, thyme, and salt and pepper to taste over medium high heat. Stir often until bacon and vegetables are golden brown, 12-15 minutes.
Step 2
Sprinkle flour over bacon and vegetables. Stir often over the heat for 2 minutes. Slowly stir in 1 cup of broth until mixture simmers and thickens, about 2 minutes.
Step 3
Add remaining broth and chilies and stir often until simmering. Gently whisk in half and half. Stir just until hot.
Step 4
Ladle soup into bowls and serve immediately.
