Chicken Parmesan with Basil

  1. 2 pounds boneless skinless chicken breasts
  2. Salt and freshly ground pepper
  3. 2 tablespoons Sensations Extra Virgin 100% Olive Oil
  4. 1 onion, chopped
  5. 1 jar (24 ounces) Sensations Sweet Basil Marinara
  6. 1/2 cup dry red wine
  7. 3 tablespoons minced fresh basil leaves
  8. 1 cup Compliments Shredded Parmesan Cheese
  9. Hot, cooked and buttered Sensations egg noodles (optional)


  1. Preheat oven to 425°F. 
  2. Season chicken to taste with salt and pepper. 
  3. Heat oil in a 12-inch nonstick frying pan over high heat. 
  4. Add chicken and cook, turning once, until browned but still pink in center (cut to test), about 7 minutes. 
  5. Transfer chicken to a lightly greased baking dish and set aside.
  6. Add onion to frying pan and cook, stirring often, until onion is lightly browned, 3-4 minutes. 
  7. Add marinara, red wine, and basil. Cook, stirring often, until bubbling, about 2 minutes.
  8. Spoon sauce over chicken in baking dish and sprinkle with cheese.
  9. Bake until chicken is no longer pink in center (cut to test), sauce is bubbling,and cheese is browned, 10-15 minutes. 
  10. Sprinkle additional chopped basil over the top just before serving, if desired. 
  11. Serve immediately over egg noodles if desired.
