Osso Bucco Chicken

  1. 2 tablespoons Sensations Extra Virgin 100% Olive Oil
  2. 11/2–13/4 pounds boneless skinless chicken thighs
  3. 1 cup Compliments Chicken Broth
  4. 1/4 cup dry white wine
  5. 2 cloves garlic, minced or pressed
  6. 1 teaspoon minced Compliments Organic Fresh Rosemary
  7. 2 tablespoons Compliments Unbleached Flour
  8. 3 tablespoons water
  9. 3 tablespoons Italian parsley, finely minced
  10. finely grated and minced rind (yellow part only) from 1 lemon


  1. In a heavy 12-inch frying pan, place the olive oil over medium-high heat.
  2. When hot, add chicken and cook, turning occasionally, until browned but still not cooked through, 5-6 minutes. 
  3. Add broth, wine, garlic, and rosemary to pan. Cover and bring to simmer until chicken is no longer pink in center (cut to test), about 10 minutes.
  4. In a small bowl, mix together flour and water until completely smooth.
  5. Stirring constantly, slowly add flour mixture to chicken, whisking until smoothly incorporated and sauce thickens, about 2 minutes.
  6. Spoon chicken and sauce into a serving container or onto individual plates. Mix together parsley and lemon peel. 
  7. Sprinkle over chicken or allow diners to sprinkle over chicken to taste and serve immediately.
