Ingredients

  • 11/2 tablespoons olive oil plus extra 1/2 tablespoon
  • 4 Compliments Balance Chicken Breast Fillets
  • 2 tablespoons salted capers, rinsed and drained
  • 1 teaspoon red pepper chili flakes
  • 1 tablespoon lemon rind, finely grated
  • 2 cloves garlic, sliced
  • 2 tablespoons lemon juice
  • 1/2 cup parsley leaves, chopped
  • Lemon wedges, to serve
  • 5 ounces Compliments Organic baby spinach, to serve
  • Cracked Black Pepper

Method

  1. Heat 11/2 tablespoons of the oil in a frying pan over medium heat.
  2. Sprinkle the chicken with the pepper. 
  3. Cook for 5 minutes on each side or until browned. 
  4. Add the remaining oil, capers, chili flakes, lemon rind and garlic, and cook for 1 minute. 
  5. Add lemon juice and parsley. 
  6. Serve on 4 plates with spinach and lemon wedges.
