Chicken Breast with Lemon and Parsley
Ingredients

11/2 tablespoons olive oil plus extra 1/2 tablespoon

4 Compliments Balance Chicken Breast Fillets
-
2 tablespoons salted capers, rinsed and drained
-
1 teaspoon red pepper chili flakes
-
1 tablespoon lemon rind, finely grated
-
2 cloves garlic, sliced
-
2 tablespoons lemon juice
-
1/2 cup parsley leaves, chopped
-
Lemon wedges, to serve
-
5 ounces Compliments Organic baby spinach, to serve

Cracked Black Pepper
Method
- Heat 11/2 tablespoons of the oil in a frying pan over medium heat.
- Sprinkle the chicken with the pepper.
- Cook for 5 minutes on each side or until browned.
- Add the remaining oil, capers, chili flakes, lemon rind and garlic, and cook for 1 minute.
- Add lemon juice and parsley.
- Serve on 4 plates with spinach and lemon wedges.
