Ingredients

  • 1 onion, chopped
  • 2 tablespoons Sensations Extra Virgin 100% Olive Oil
  • 2 cloves garlic, minced or pressed
  • 1 tablespoon curry powder
  • 11/4 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 3 tablespoons Compliments Unbleached Flour
  • 11/2 cups Safeway Compliments Broth
  • 1 can (15 ounces) Compliments Chick Peas, drained
  • 1/4 cup minced fresh cilantro
  • hot, steamed Sensations Jasmine Rice
  • Long Grain Rice (optional)

Method

  1. Combine onion, oil, garlic, and curry powder in a 12-inch nonstick frying pan over medium high heat. 
  2. Stir often until onion has softened and curry isslightly toasted and fragrant, 3-4 minutes. 
  3. Add chicken to pan and cook,stirring often, until chicken is lightly browned, about 5 minutes. 
  4. Sprinkle flour over chicken and stir to coat; cook 1 minute.
  5. Add broth gradually, stirring until smooth. 
  6. Add chick peas. 
  7. Bring mixture to a simmer, stirring often, and cook until liquid has thickened and chicken is no longer pink in center (cut to test), about 5 more minutes.
  8. Transfer curry to a serving bowl and sprinkle with cilantro. Offer with hot, steamed jasmine rice as an accompaniment if desired.
