Ingredients

  • 1/2 cup plain 2% Greek yogourt
  • 2 tbsp reduced-fat mayonnaise
  • 1 tbsp grainy mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 ½ cups cubed leftover cooked chicken (store-bought, grilled, baked or poached)
  • 1 cup diced red apple
  • 1/4 cup chopped toasted walnuts
  • 1/4 cup raisins
  • 3 tbsp finely chopped green onion
  • 4 multigrain buns, split

Method

        
  1. In large bowl, mix yogourt, mayonnaise, mustard, salt and pepper. Stir in chicken, apple, walnuts, raisins and green onion.
  2. Fill 4 buns with the chicken salad.
Tip:
Alternatively, serve chicken salad in lettuce cups or on crackers.
