Cheddar Bacon and Apple Grilled Cheese

  1. 8 slices whole wheat or multigrain bread
  2. 2 tbsp (30 mL) butter
  3. 4 tsp (20 mL) grainy mustard
  4. 4 tsp (20 mL) apricot jam
  5. 1 cup (250 mL) arugula
  6. 1 Gala apple, thinly sliced
  7. 8 slices Cheddar cheese (about 4 oz/125 g)
  8. 4 slices bacon, cooked and cut in half


  1. Butter 1 slide of all bread slices. Spread mustard and jam on the unbuttered sides of 4 slices of bread. Top with arugula, apple slices, 1 slice cheese,1 slice bacon, and another slice of cheese. Add top slices of bread (buttered-sides on outsides) 
  2. Cook sandwiches in large non-stick skillet over medium-low heat, in batches if needed, until golden brown before turning to brown second side and cheese is melted. Cut sandwiches in half to serve.
