Quick Cannelloni

  1. 11/4 pounds ground turkey breast
  2. salt and freshly ground pepper
  3. 1 tablespoon Sensations Extra Virgin 100% Olive Oil
  4. 11/2 cups Compliments Light Ricotta Cheese
  5. 1 cup Safeway Sensations Alfredo Sauce
  6. 8 egg roll wrappers
  7. 2 cups Pasta Sauce
  8. 3/4 cup Sensations Shredded Italian Cheese Blend


  1. Preheat oven to 450°F. In a 12-inch nonstick frying pan over high heat, combine turkey, salt, and pepper to taste. 
  2. Stir often until turkey is no longer pink, about 4 minutes. 
  3. Spoon turkey and pan juices into the bowl of a food processor. 
  4. Add ricotta and 2/3 cup Alfredo sauce.
  5. Blend until smooth. Lay an egg roll wrapper out on work surface. 
  6. Spoon 1/8 of the turkey mixture in a line across the wrapper. 
  7. Roll dough up to enclose filling, leaving ends open. 
  8. Repeat to use remaining wrappers and filling.
  9. Arrange cannelloni in a single layer on a lightly greased 9x12-inch baking dish.
  10. Spoon vodka sauce over cannelloni, drizzle with remaining Alfredo sauce, and top with cheese. 
  11. Bake cannelloni until sauce and cheese are bubbling, 15-20 minutes. 
  12. To serve, use a spatula to ladle onto plates.

Save Those Wrappers: If you don’t have plans for the remaining egg roll wrappers, you can wrap the package tightly in plastic wrap and foil and freeze for another time. Thaw wrappers overnight in the refrigerator before using.
