Ingredients

  • 1/4 cup (60 mL) apple cider vinegar
  • 2 tbsp (30 mL) vegetable oil
  • 2 tbsp (30 mL) honey
  • salt and pepper to taste
  • 4 cups (1 L) shredded green cabbage
  • 2 green onions, thinly sliced
  • 1 medium carrot, grated
  • 1 medium red apple, finely cubed
  • 1/3 cup (75 mL) walnut pieces
  • 3 oz (90 g) blue cheese, crumbled

Method

  1. In large bowl, whisk together vinegar, oil, honey, salt and pepper. Add cabbage, green onions, carrot, apple, walnuts and cheese. Toss to combine and serve.

Tip: Substitute red cabbage and green apple. In place of walnuts, use pecans pieces or sliced, toasted almonds.
