Aussie Burger

Ingredients

  1. 4 Canadian Chuck Burger patties (each 6 oz/180 g)
  2. 4 pineapple rings (each about 1/2 inch/1 cm thick)
  3. 2 tbsp (30 mL) butter
  4. 4 fried eggs
  5. Salt and pepper
  6. 4 soft Kaiser buns
  7. 1/4 cup (60 mL) mayonnaise
  8. 4 lettuce leaves
  9. 8 tomato slices
  10. 4 slices jarred pickled beets

Method

  1. Preheat grill to medium-high; grease grate well. Grill burgers for 5 to 6 minutes per side or until internal temperature reaches 160°F (71°C). Meanwhile, heat cast iron or heavy skillet on grill; melt butter. Crack eggs into pan, and season with salt and pepper; close lid and cook for 3 or 4 minutes or until egg whites are firm but yolks are still soft. Gently transfer eggs to plate. Grill pineapple for 2 to 3 minutes per side or until grill-marked. Grill buns for 1 to 2 minutes or until toasted.
  2. Spread mayonnaise over each bun; layer burgers, lettuce, tomatoes, pickled beets, pineapple and fried egg in each bun.

 Tip: Alternatively, you can fry eggs in a cast iron or nonstick pan on the stovetop.
