Balsamic Fig & Maple Gravy

  1. 2 shallots, minced
  2. 1 clove garlic, minced
  3. 2 tbsp (30 mL) all-purpose flour
  4. 2 cups (500 mL) reduced sodium chicken broth, divided
  5. 1/4 cup (60 mL) Balsamic Fig & Maple Marinade


  1. Remove all but 2 tbsp (30 mL) of fat from turkey roasting pan. Place pan on medium heat on top of the stove. Add shallots and cook for 2 min. Add garlic and cook for 1 min.
  2. Stir in flour and cook, on low, for 2 min. Add enough broth to cover solids in pan and stir. Bring to a simmer and add the rest of the broth in stages, letting gravy come back to a simmer each time before adding more. Once all broth has been added, simmer for 2 min. more.
  3. Add balsamic marinade, bring to a boil, take off heat and strain into a serving dish.
